Smooth and creamy soup with roasted butternut squash and warm spices.

Ingredients
- 1 large butternut squash, peeled and cubed
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1/2 cup cream
- 2 tbsp olive oil
- 1/2 tsp nutmeg
- Salt and pepper to taste

Preheat oven to 400°F (200°C).

Toss squash with olive oil, salt, and pepper. Roast for 25 minutes until tender.

In a pot, sauté onion and garlic until fragrant.

Add roasted squash and broth, bring to a simmer for 10 minutes.

Blend until smooth using an immersion blender.

Stir in cream and nutmeg. Simmer 5 more minutes.
