Creamy Tuscan Chicken

Ingredients
- 4 boneless chicken breasts
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1/2 cup parmesan cheese, grated
- 1 tsp Italian seasoning
- Salt and pepper to taste

Season chicken breasts with salt, pepper, and Italian seasoning.

Heat olive oil in a large skillet over medium-high heat. Cook chicken until golden brown on both sides, about 6-7 minutes per side. Remove and set aside.

In the same skillet, add garlic and cook for 1 minute until fragrant.

Add heavy cream, chicken broth, sun-dried tomatoes, and parmesan cheese. Stir well and bring to a simmer.

Add spinach and cook until wilted, about 2 minutes.
