Lemon Blueberry Muffins

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup butter, melted
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup milk
  • Zest of 2 lemons
  • 2 cups fresh blueberries

Instructions

    Preheat oven to 375°F (190°C). Line muffin tin with paper liners.

    In a bowl, whisk together flour, baking powder, and salt.

    In another bowl, mix melted butter, sugar, eggs, milk, and lemon zest.

    Fold wet ingredients into dry ingredients until just combined.

    Gently fold in blueberries.

    Divide batter among muffin cups.

    Bake 18-20 minutes until golden and toothpick comes out clean.
