Ingredients
- 2 tbsp red curry paste
- 1 can coconut milk
- 2 cups mixed vegetables
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 tbsp fish sauce
- 1 tbsp brown sugar
- Fresh basil leaves
- Cooked rice for serving
Instructions

Heat curry paste in a large pot over medium heat for 1 minute.

Add coconut milk and stir well.

Add vegetables, bell pepper, and onion. Simmer for 15 minutes.

Stir in fish sauce and brown sugar.
